Quinoa Salad



I used to work at a super healthy cafe where we often made Quinoa Salad (I guess it was on the menu, so that might have something to do with it… ) and the recipe changed all the time changing out ingredients for what was in season. So you could say I’ve been around the Quinoa Salad block a couple times.. (Ha. Ha… ) Here is my favorite variation.

Simple Summer Quinoa Salad

1/2 Cup Quinoa

8oz Mozzarella

1 Cup (or more.. ) Cherry Tomatoes

Lemon Basil

Zest of One Lime


Generous Swig of Olive Oil

Small Swig of Sesame Oil

Salt & Pepper

Lime Juice of One Lime

One Jalapeno, seeded and sliced

How it’s made:

1. In a small pot bring one cup of water and 1/2 cup quinoa to the boil. Put a lid on, and reduce heat, simmering on low until the quinoa has soaked up all the water. It should be fluffy and lovely.

2. Cool your cooked Quinoa (take it off the stove and put aside whilst you continue on with these steps)

3. Slice your grape tomatoes in half and cut the mozzarella into small cubes and throw in a nice medium sized bowl. Add the fresh basil and cooked quinoa and zest of one lime.

4. Mix together your dressing! If it seems a bit boring, you could always throw in a sliced and seeded jalapeno. Drizzle your dressing over the salad and stir it all together. Enjoy!

Optional Seasonal Ingredients:

Cucumber Slices, Roasted yam, Sliced Carrots, Cranberries, Green, Red and Yellow Peppers.
